All software users use either ready-made software or white label. The reasons depend on purpose you start your own site: fast and just for ads, or like a serious business.
In a second case usually people choose ready-made software and add their personality to it.
Besides, white label is less flexible with prices you can set and payment options and services for users.

White label solutions offer a ready software with pre-set options for everyone and you're limited to change them (including prices for memberships and membership options). The reason for that is that all partner soyes run under 1 database and it has a certain structure. So you cannot change it under your business idea as they won't change general structure because of 1 site in the network.
What is good about them is that they offer you databases of users. Many of the companies can sort databases and switch on the one you need for your site. For example, if you start a site for UK teenagers, then they will add this database to your site.
As everywhere, you get support and initial setup. The question is: what's your purpose of creating Dating Site?

I've been using a white label dating provider for a while and have had good luck. The templates are customizable (see http://www.findtruelove.com for example) and support is good. It's not perfect, but it's good enough to get a site going quickly.
